This qualification involves a recap on the principles involved in food hygiene and then detailed methods of hazard analysis, which is a system that will help ensure the safety of all food products that are sold, and that they pose the least possible injury to a customer.
The second day is a hands-on student participation day – learning by doing, whereby each candidate will prepare a HACCP for a food system.
This level of training is suitable for staff working at a supervisory level. There is new legislation being introduced 1st January 2006 which will require all businesses to have an understanding of this.
